I’m with you on the rotisserie chickens! I try to buy them when they’re marked down and just take all the meat off and freeze them for later.

Rotisserie chicken is a never fail option for a quick dinner. We usually make chicken salad out of it or I pull the meat off and make a chicken stew. Love the enchilada recipe!!

I was in Meijer yesterday and the rotis chicken smelled so gross. I think I’ll make some chicken and check out this recipe. I need to start cooking ahead and freezing.
